Gulaman at sago
Gulaman at sago is a classic Filipino cooler made with chewy tapioca pearls (sago), bouncy jelly (gulaman), brown sugar syrup, and ice. It’s not just a drink—it’s a street-side staple, a fiesta favorite, and a nostalgic merienda must-have.
Its roots go way back to Spanish colonial times, when gelatin-based desserts made their way into the Philippines. Filipinos adapted the idea using agar-agar (gulaman), derived from seaweed, and added sago—which has been used in Southeast Asian cooking for centuries.
